My kitchen holds a couple dozen cookbooks which I regularly used before I started going raw. To stop the dust from settling too much I decided to sift through them for inspiration for new raw recipes. I must say, there was not much choice but a few salads stood out and this is by far my favourite one.
I found this recipe in Jamie Oliver’s ’30 Minute Meals’ and it’s been in regular rotation since I first made it. It took only a very small couple of tweaks to fit the raw diet and my personal taste. Most of the ingredients are pictured here, although that chunk of ginger is way too big (dinner was extra spicy tonight!).
You’ll need: A handful of whole raw almonds, 5 or 6 carrots, 1 fresh red chilli, a bunch of fresh coriander (cilantro for all you North American’s), a 2cm piece of fresh ginger (half of what’s pictured above lol), Olive oil, salt & pepper, 1 lemon and a handful of raisins.
It’s really simple to put together: Grate the carrots into a bowl. Finely chop the coriander and chilli (seeds removed), finely grate the ginger and add these to the bowl. Pour over 2 or 3 tablespoons of olive oil and season with salt & pepper. Finely grate in some lemon zest and a large squeeze of lemon juice. Add the raisins and the coarsely chopped almonds. Mix well and enjoy!
